Meatloaf

I've been dying to make my own meatloaf...
I don't really care for red meat a whole lot, but I do like meatloaf and rib-eye steak... yum.

So I did... and it was hilariously easy. O.M.G. haha

This has got to be one of THEE EASIEST MEALS EVER!!
  1. Preheated the oven to 350°F
  2. I took 2.25lbs of fresh ground chuck.
  3. Threw it in a big ole' bowl.
  4. Added one Crumbled up one package of crackers (salted) 
  5. (per husband's request) I added an entire diced yellow onion (he really likes onion)
  6. Poured some random amount (judgment call) of Pace chunky mild salsa on top
  7. Added 2 raw egg's
  8. added some random amount of garlic salt (judgment call)
  9. and mixed it THOROUGHLY with my bare hands (which I despise doing.)
  10. Then I formed 2 separate loves and slapped them onto 2 separate pans and through them into the oven for 60 minutes
I decided against pouring ketchup over it BEFORE baking because neither myself nor my husband like rubbery ketchup. so we dabbled some on before devouring it... and we didn't add too much because the flavor of the meatloaf its self was AWESOME!! I can't wait to make it again! ((only next time I will only be doing 3lb's and only 3/4 of an onion... because regardless of how much I like onion as well, that was still an awful lot of onion...)

Stromboli

When I was in high school, stromboli day was THEE day to eat school lunch... it was devoured... there were never seconds... it was amazing... and so I've been searching for the recipe since I started my cooking adventures.... I found one that comes close. I found numerous recipe's for it and then figured out what I NEEDED and then made it how I wanted it.

The husband loved it.
The teenager loved it...
and the 3 year old picky little eater loved it... and almost finished all of her meal for once.

First Stromboli

INGREDIENTS

  • Flour
  • 1 pizza dough ( I rolled it out pretty thin on accident--beginner here)
  • 1 egg yoke (add a little bit of water to make an egg wash to brush along the edges of the pizza dough)
  • Provolone Cheese 
  • Deli Ham
  • Deli Salami
  • Spicy Pepperoni
  • Mozzarella Chunk (I cut 1/2" think chunks)
  • Olive Oil ( I only use extra virgin olive oil. This is to rub or brush onto the top of the Stromboli after it is rolled.)
  • Lastly, right before I put it in the oven I sprinkled Garlic salt on the top
  • Pizza Sauce of your liking OR Marinara Sauce

DIRECTIONS

  1. Preheat Oven to 400 degrees 
  2. Flour the work space and Flatten the pizza dough into a rectangle
  3. lay the provolone cheese down the center, overlapping
  4. then lay the ham the same
  5. then the salami
  6. then the pepperoni
  7. then scatter the chunks of mozzarella along the layers
  8. then brush the egg wash along the edges
  9. then take one side of the Stromboli and roll it up
  10. once rolled, fold over the ends tightly. (I had to flip mine over, again because I'm a beginner and flattened my dough to much.)
  11. I then rubbed the olive oil all over the top and sprinkled the garlic salt on and tossed it in the oven 

Second Stromboli

All I did differently
  1. NOT make my dough as thin
  2. Ham and salami 
  3. NO mozzarella 

Bake for 20 to 25 minutes and the when you pull them out, slice them and serve with your choice of dipping sauce... so yummy

Because I made the dough so thin for the first one and added more meat and cheese, it didn't slice very well. I personally love pizza crust when it is garlicy and not too crunchy, so the second Stromboli was wonderful for me. the dough was thicker and there was less meat and cheese. It is really your call on what to put in there... :)
